The cuvée "Confidence", AOC red Ventoux aged in oak barrel, comes from the best Grenache and Syrah vineyards of the cellar. We selected old and well-trellised vines with a small grapes proportion to obtain grapes with an excellent ripeness level and a good concentration necessary to a long ageing in oak barrel.

Characteristics: Oaked taste, rich, concentrated
Terroir: The vines are located on right bank of Calavon and are exposed full south, in top of hillsides, or of the gravelly brow around the villages of Roussillon and Goult.
Grape variety: Syrah, grenache and marselan.
Vinification: Grapes are vinified on separate concrete tanks with a control of temperatures. Cold maceration before fermentation during 24H. Traditional fermentation with daily pumping over, especially for Syrah. Sitrring of the lees at the end of fermentation. Maceration during 3 weeks. Blending of free run wine and first press wine. Ageing in french oak barrel during 12 months (20% of new barrel). Racking and blending of the several barrels. Fining and bottling.

Color : deep red color
Nose : rich and complex nose
Mouth : good persistancy in mouth with very present wooden aromas. Still young wine to be kept a few years.
